Hi,
Is there a way to have the level crossings work on auto while I get used to the traffic flow? If so am I able to change to user control once the sim has started?

No. You can get use to the traffic flow by running the sim without any level crossings.

As Barry says, there is an option when you start the sim which effectively removes all the level crossings. You will still have to set the routes though.

If you are part way through a game and don't want to restart, you can always just leave them down and deselect Auto and accept the penalties.

This must apply only to Feltham and maybe a some other sims I haven't tried yet. I've never seen this useful feature in my regulars such as Exeter and Westbury.

Obvious next questions: How many sims is this found in and when can I expect to see it apply to all sims?

Its dependent on the individual sim developer, I've no plans to add it to any of my released sims (North Wales Coast, North East Wales, and Llangollen)

Feltham is really the only sim where level crossings become problematical due to the high number of crossings and intense service.

Wimbledon also has this, and I have an inkling that one of the Victorias (Central?) might do too.

VC has a 'train approaching' indicator for Eaastfields LC, but you still have to lower the barriers yourself. VSE has no CCTV crossings.

Not sure what good the feature would be on Westbury, as there's no CCTV LCs

South Humberside has an option for auto-lower on selected crossings. Floriston on Carlisle has a weird auto working system as well.
