(I'm not entirely sure where this should go, so apologies if I have put it in the wrong bit)

For example: in a recent game in Exeter I was playing, there was a Track Circuit Failure affecting a pair of points at Cogload Junction, meaning trains could only go via Bridgewater. Similarly a points failure cutting off Watford C.S from Watford Jct. in Wembley Sub.

Is it possible to divert trains when such an infrastructure failure occurs?

Yes. You can either tell the train to ignore a calling point or abandon its timetable when the driver phones in to complain about the route set, or you can edit the train's timetable (equivalent to Control telling the driver that she's doing something different).

When doing moves like this, it's worth considering whether or not a driver, in real life, would sign the alternative route.

Bridgwater vice Castle Cary would probably be OK (though I've seen rumblings on other forums that at least some South West GW drivers who work London services have had it taken off them recently); but not all diverts which make sense in the simulation would be signed in reality.

Correct. Plymouth drivers have had Taunton to Bristol via Weston-super-Mare removed from their route cards. Exeter drivers still sign the road.

The approach you take all depends on how much information you have and how much of that you want to try an implement in a session.

As one can tell, there are users who have a good level of understanding about real-world situations. Of course there are many users (including me, and I suspect OP) who don’t have this knowledge.

In general, do what you want to do based on the approach you want to take.
