It’s been quite a while since I played this sim so I can’t remember whether a train destined for the yard is supposed to terminate in either of the two visible tracks (without a TC) or if it’s ok to send it beyond those using the grey exit arrow. If I did that, would it drop off the sim?

Anything booked to the New Yard will stop in one of the two track-circuited sidings, it doesn't matter which one (unless there's a specific TT note). The line beyond is the New Yard Headshunt, any train booked to use that will be timetabled there. It's not an exit point.

The yard itself is formed by those two tracks, so trains timetabled to go into the yard will just stop there. The track beyond it is a headshunt, if you signal a train there (and abandon its timetable) it will just hit the buffers. You can see a 'block' at the end of the track to indicate the buffer stop.
