I find that most of the simulations are quite big for a single person to handle (at least for a newbie like me), so I was wondering if there's a way to give some sort of automatic control to some of the panels, so that the simulator handles routing on them? I'm mostly playing Exeter now and there's no ARS.

When ARS is not provided on a sim, there's no way to automatically move trains around I'm afraid.

I suggest finding an ARS-enabled sim of similar complexity - something like 'Swindon A&B IECC' sim.

In that sim, ARS is available, and as you get more confident you can take manual control of more and more of the sim. This will help you develop your skills for non-ARS sims.

You could also try a quieter timetable for Exeter, to reduce the pressure while learning the area. If you'll excuse the shameless plug, my timetable for 13/02/2014 is available here, and features a much reduced service due to the collapse of the sea wall at Dawlish and the Bridgwater route being underwater.
