Barnetby for freight, if the South Humberside TT is still accurate, or Doncaster, although looking at an outdated Freightmaster how much freight you get could be down to luck.

Barnetby is very variable depending on the coal plan, and Doncaster likewise (has a habit of being quiet in the afternoons). Peterborough varies depending on stone traffic. Depending on what you call a long way from Peterborough, somewhere like Nuneaton/Water Orton/Tamworth (Water Orton in the mornings is busier than the West Coast) are good bets. If you're looking for a Saturday, then it has to be Doncaster at the moment with the variety of workings, light engine moves and engineers trains. WCML can be good for freight but I think it can be variable. Last time I was on it with some mates, between London Euston and Bletchley, was a Monday and we didn't get much freight at all.
